For Italians summer means taking sweet ripe tomatoes and turning them into the years supply of Passata. Join Monique in this hands-on group passata making experience in the lead up to CERES Fair Food’s Crowdsaucing Day. Monique will show you how to make your very own sauce just how Italians do it at home every summer, creating a production line of tasks for everyone to join in on. You will be using both manual machines and also a ‘no machine’ method of preserving tomatoes.
Although we will not be water-bathing (preserving) the fresh passata on the day, you will go home with instructions on how to water-bath your own passata. All you need at home is a large saucepan. You should expect to take home approximately 8 jars of passata.
