Ephemera is the Project of Rhen Dodd and Janelle De Gabriele. The project aims to be an ongoing exploration of Victorian vineyards, with a lean to sustainable and considered viticulture.
There are no fixed regions, and the varietals sourced are ones that we believe are well suited to the region. The wines are made with as little tinkering in the cellar as possible, especially during fermentation.
All the wines are fermented naturally and see some time in seasoned barrels for ageing on full solids.
Skins and stalks are included in all ferments to varying degrees, as we believe this helps to convey site expression. No fining or filtering is employed.
